Potato Salad

2 lbs Potatoes (cooked, peeled, diced)
1 cup Celery (diced)
1/2 cup Onions (diced)
1/3 cup Embellished Relish
(Sweet Tomato or Sweet Jalapeño)
4 Hard-boiled Eggs (chopped)
1 ¼ cups Mayonnaise
2 tsp Sugar
2 tsp Celery Seed
2 tsp Vinegar
2 tsp Dijon County Mustard
1 tsp Salt

In a small bowl combine mayonnaise, sugar, celery seed, vinegar, mustard, and salt – set aside. In a large bowl combine potatoes, celery, onions, and Embellished Relish. Add the mayonnaise mixture. Stir well. Add chopped hard-boiled eggs and stir lightly. Chill for at least 4 hours or overnight. Serves 8.

 
Tuna Salad

1 Can White Tuna
1 Stalk Celery (chopped)
1 Heaping Tablespoons Mayonnaise (or desired amount)
1 Heaping Tablespoon Embellished Relish (Sweet Tomato or Sweet Jalapeño)
Mix well. Serve on favorite bread, toast or salad greens.

 
Cream Cheese Spread

1 Cup Cream Cheese
1/3 Cup Embellished Relish (Sweet Tomato or Sweet Jalapeño)
Mix thoroughly
Enjoy on toasted bagels or your favorite crackers!

Lobster Rolls

1 lb Chopped Lobster

3-4 tbs Mayonnaise

4 tbs Embellished Relish

6 New England Style Frankfurter Rolls

Butter (for grilling rolls)

Mix lobster, mayo and relish. Serve lobster salad in grilled rolls. Enjoy!
